These fillet portions (pavés) of rainbow trout are hot-smoked until fully cooked. Their intense dark colour promises a flavour very different from salmon, with flesh that is also less fatty. Roasted Smoked Rainbow Trout is great on canapés or as an appetizer and truly delectable in a cream sauce over pasta.
